Ingredients:
- 1 (28 oz) can whole tomatoes with juice
- 2 (10 oz) cans Rotel (diced tomatoes and green chilies)
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 whole jalapeño, quartered and sliced thin
- 1/4 tsp sugar
- 1/4 tsp salt
- 1/4 tsp ground cumin
- 1/2 cup fresh cilantro (or more to taste)
- Juice of 1/2 lime
Directions:
Step 1: Blend it Up
- In a blender or food processor, combine the whole tomatoes, Rotel, onion, jalapeño, garlic, sugar, salt, ground cumin, lime juice, and cilantro.
- Pulse until you reach your preferred texture. Keep it chunky with fewer pulses (10–15) or smooth it out with more pulses.
Step 2: Adjust and Perfect

- Adjust the salt, lime juice, or cilantro to suit your taste.
Step 3: Chill and Serve
