Ingredients
- 4 tbsp cooking oil, divided
- 6 chicken drumsticks, thawed, skin on
- Salt, to season the chicken
- 1 (7 oz) bag dry fideo noodles
- 6 cups warm water
- 3 tbsp tomato paste
- 2 tsp garlic salt
- 1 tsp chicken bouillon powder (Knorr)
Directions
1. Cook the Chicken
- Heat 2 tbsp of cooking oil in a 3-quart (10″) pan over medium-low heat.
- Season the chicken drumsticks with salt, then cook in the pan, turning frequently, until the skin crispsโabout 7-8 minutes.
- Remove the drumsticks from the pan and set aside. (The chicken will not be fully cooked yet.)
2. Toast the Fideo
- In the same pan, add the remaining 2 tbsp of cooking oil.
- Add the fideo noodles and toast over medium-low heat, stirring constantly to prevent burning, until they turn a light golden brownโabout 6-8 minutes.
3. Build the Broth
- Stir in the warm water, tomato paste, garlic salt, and chicken bouillon powder (Knorr).
- Bring the mixture to a gentle simmer, stirring to ensure the tomato paste dissolves completely.
4. Combine Chicken and Broth
- Return the chicken drumsticks to the pan.
- Bring the soup back to a low simmer, cover, and cook on low heat for 10 minutes.
5. Rest and Serve
- After simmering, turn off the heat and let the soup rest for 10-15 minutes.
