- 1 small onion
- 3 cloves garlic
- 8 Chile guajillo or New Mexico chiles (add 5 Chile de árbol for extra spice)
- 1 tsp ground Mexican oregano
- Salt and pepper to taste (kosher salt preferred)
- 2 cups water

Step 1: Prepare the Pork
- Heat a drizzle of oil in a large pan over medium-high heat.
- Add the pork chunks and pour in the water. Season generously with salt and pepper.
- Cook uncovered until the water evaporates, then sear the pork, turning occasionally, until it’s golden brown on all sides. Remove from heat and set aside.
Step 2: Prepare the Chile Sauce
- Heat a comal or dry skillet over medium heat. Toast the chiles, turning frequently, until they develop a slight brownish color. Avoid burning them, as this will make the sauce bitter.
- Remove the stems from the toasted chiles and place them in a blender with 2 cups of very hot water.
- Add the onion, garlic, and ground oregano to the blender. Blend until you achieve a smooth, vibrant red sauce.
Step 3: Strain the Sauce
- Strain the blended chile sauce through a fine-mesh sieve into a bowl or directly into the pan with the pork. This removes seeds and ensures a smooth texture.
Step 4: Simmer the Dish
- Pour the strained chile sauce over the seared pork in the pan. If needed, add a little more water to reach your desired consistency.
- Cover and simmer over low heat, stirring occasionally, until the pork is fork-tender and infused with the rich flavors of the sauce. Taste and adjust the salt as it cooks.
