Mexican Pinto Bean Chili 🌶️🍲

Ingredients
✔️ 1 lb dried pinto beans
✔️ 2 lbs ground beef
✔️ 1 medium onion, chopped
✔️ 3 celery ribs, chopped
✔️ 3 tbsp flour
✔️ 4 cups water
✔️ 2 tbsp chili powder
✔️ 2 tbsp ground cumin
✔️ ½ tsp sugar
✔️ 1 (28 oz) can crushed tomatoes
✔️ 2 tsp cider vinegar
✔️ 1 ½ tsp salt
For the Chili Cheese Quesadillas:
✔️ 12 flour tortillas
✔️ 1 can chopped green chiles
✔️ 1 ½ cups shredded cheddar cheese
✔️ Oil, for cooking
Instructions
1️⃣ Prep the Pinto Beans
🥘 Boil dried pinto beans in a large pot for 2 minutes.
⏳ Remove from heat and let them stand for 1 hour.
💦 Drain and rinse thoroughly.
2️⃣ Cook the Beef & Veggies
🔥 In a Dutch oven, brown ground beef over medium heat with chopped onion and celery until the meat is cooked through.
🥄 Sprinkle flour over the beef and mix well.
3️⃣ Simmer the Chili
💧 Gradually stir in water until well combined.
🫘 Add pinto beans, chili powder, cumin, and sugar.
🍲 Bring to a boil, then reduce heat and let simmer for 1.5 hours, stirring occasionally.
🛑 After 1.5 hours, stir in crushed tomatoes, cider vinegar, and salt, heating through.
4️⃣ Make the Chili Cheese Quesadillas
🌮 Spread chopped green chiles on one half of each tortilla.
🧀 Sprinkle shredded cheddar cheese over the chiles.
🔄 Fold the tortillas in half and cook in a lightly oiled pan until golden brown and crispy on both sides.
