  • 1 teaspoon cumin seeds, toasted and ground (optional)
  • 2 teaspoons oregano
  • 1 tablespoon soy sauce (or fish sauce, or salt to taste)
  • 2 tablespoons lime juice
  • 1/4 cup cilantro, chopped for garnish

Directions:

1. Prepare the Tomatillo Sauce

Preheat the broiler. Arrange the tomatillos, poblano peppers, jalapeños (cut side down), onion, and garlic on a baking sheet.
Broil for 8–10 minutes, or until the skins are blistered and slightly charred.
Transfer the roasted vegetables to a blender, add the loosely packed cilantro, and blend until smooth. Set aside.

2. Brown the Pork

Heat oil or bacon grease in a large Dutch oven or heavy-bottomed pot over medium-high heat.
Add the pork cubes and sear until golden brown on all sides. Work in batches if necessary to avoid overcrowding. Remove the browned pork and set aside.

3. Simmer the Chili Verde

Return the pork to the pot, then pour in the tomatillo sauce and broth.
