Refried beans, or frijoles refritos, are a cornerstone of Mexican home cooking—humble, hearty, and deeply flavorful. Whether used as a taco filling, burrito base, or side dish, this classic recipe creates perfectly creamy, smoky beans with simple ingredients and traditional techniques.
🧾 Ingredients
- 1 cup dry pinto beans (or black beans for variation)
- Water, for boiling
- 1 tsp salt
- 1 tsp Mexican oregano (or epazote)
- 1/2 tsp cumin
- 3 cloves garlic, crushed
- 1 small onion, divided (1/2 whole, 1/2 finely minced)
- 1 jalapeño, finely chopped (optional for a kick)
- 1/4 cup lard (or neutral oil, like avocado or vegetable)
- Extra salt, oregano, and cumin to taste
🍲 Instructions
1. Prep the Beans
Pick through the beans, discard any damaged ones, and rinse thoroughly.
Optional: Soak the beans overnight to speed up cooking time.
2. Boil the Beans
Transfer beans to a large pot. Add:
- 1/2 tsp cumin
- 1 tsp salt
- 1 tsp Mexican oregano or epazote
- 1/2 onion (left whole)
- 3 garlic cloves (crushed)
- Enough water to cover by 2–3 inches
Bring to a gentle boil over medium heat.
3. Simmer
Reduce heat slightly, cover, and simmer for 1.5 hours (longer if unsoaked).
Check water halfway through—add hot water if needed to keep it 1 inch above the beans.
4. Check for Doneness
Beans are ready when easily mashed between your fingers.
Strain the beans, reserving the bean water for later.
5. Sauté Aromatics
In a skillet over medium-low heat, melt lard or heat oil.
Add finely chopped onion, cook until soft and golden.
Add jalapeños and sauté for another minute.
6. Mash the Beans
Turn up heat to medium-high, then add drained beans.
Begin mashing with a potato masher or spatula.
Gradually add reserved bean water to reach your desired texture.
7. Season to Taste
Taste and adjust seasoning:
Add more salt, cumin, and oregano if needed.
If using carnitas lard or seasoned oil, you may not need much extra.
8. Adjust the Consistency
Continue smashing until you reach your ideal texture:
- Chunky for rustic dishes
- Smooth and creamy with an immersion blender
9. Serve & Enjoy
Remove from heat and serve warm. Top with crumbled cheese, or use as a filling, side dish, or dip.
