Ingredients
- ½ onion, thinly sliced
- 2 jalapeños, chopped (adjust to taste)
- 2 lbs flank steak, thinly sliced against the grain
- ½ lb baby golden potatoes, thinly sliced
- 2 garlic cloves, minced
- 4 Roma tomatoes, thinly sliced
- 2 Hatch or Anaheim peppers, roasted, peeled, and chopped
- 1 (7.75 oz) can hot tomato sauce (or regular for a milder flavor)
- ¼–½ cup water
- ½ teaspoon ground cumin
- ½ teaspoon garlic salt
- ½ teaspoon black pepper
- Salt, to taste
- Chopped cilantro, for garnish
- Cooking oil, for sautéing
Instructions
- Heat a large skillet over medium-high heat and drizzle in a little cooking oil. Add the sliced onion and chopped jalapeños, then sauté for about 2 minutes until softened and fragrant.
- Add the sliced flank steak and cook for about 5 minutes, stirring occasionally, until the beef is browned and releases its natural juices.
- Stir in the sliced potatoes. Season with the cumin, garlic salt, black pepper, and salt to taste. Add the minced garlic and cook for 5–7 minutes, stirring often, until most of the liquid has evaporated.
- Add the sliced Roma tomatoes and the roasted Hatch or Anaheim peppers. Stir well and cook for several minutes, allowing the vegetables to soften and the flavors to blend.
- Pour in the tomato sauce and add ¼ to ½ cup water, depending on how saucy you prefer the dish. Stir in the chopped cilantro, reduce the heat to medium-low, cover, and simmer for about 5 minutes, or until the potatoes are tender.
- Taste and adjust the seasoning if needed. Serve immediately with warm flour tortillas, refried beans, avocado slices, and crumbled queso fresco.
Optional Substitutions
- Substitute sirloin steak for flank steak.
- Use Yukon Gold potatoes if baby golden potatoes are unavailable.
- Replace Hatch peppers with poblano peppers for a similar mild, smoky flavor.
- Use serrano peppers instead of jalapeños for extra heat.
- Add a squeeze of fresh lime juice before serving for a bright finish.
Serving Tips
- Serve with warm flour or corn tortillas.
- Pair with Mexican rice and refried beans for a complete meal.
- Top with sliced avocado, queso fresco, and extra chopped cilantro.
- Offer fresh salsa and lime wedges on the side.
