Ingredients

For the Carne Asada:

  • 1/3 cup white vinegar
  • 1/2 cup soy sauce
  • 4 garlic cloves, minced
  • Juice of 2 limes
  • 1/2 cup olive oil
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 3 pounds flank steak

For the Onion Relish:

  • 1 white onion, chopped
  • 1/2 cup fresh cilantro, chopped
  • Juice of 1 lime

For the Homemade Salsa:

  • 2 large tomatoes, diced
  • 2 jalapeño peppers, diced
  • 1 white onion, quartered
  • 4 garlic cloves, peeled
  • 4 dried red chile pods
  • Salt and pepper to taste

For the Tacos:

  • 1 (32 oz) package corn tortillas
  • 2 cups grated Cotija cheese (optional)
  • 2 limes, wedged (optional)

Instructions

Marinate the Steak:

  1. In a medium bowl, whisk together the vinegar, soy sauce, minced garlic, lime juice, and olive oil.
  2. Add salt, black pepper, garlic powder, chili powder, oregano, cumin, and paprika. Mix until well blended.
  3. Place the flank steak in a large glass baking dish and pour the marinade over it. Turn the steak to coat both sides.
  4. Cover the dish and marinate overnight or for at least 6 hours for maximum flavor.

Prepare the Onion Relish:

  1. In a small bowl, combine the chopped onion, cilantro, and lime juice.
  2. Cover and refrigerate until ready to serve.

Make the Salsa:

  1. Heat a skillet over medium-high heat. Toast the chile pods for a few minutes, then soak them in a bowl of water for 30 minutes.
  2. Preheat the oven to 450°F. Place the tomatoes, quartered onion, jalapeños, and garlic cloves on a baking sheet. Roast for 20 minutes until slightly charred.
  3. In a blender or food processor, combine the roasted vegetables and soaked chile pods. Add salt and pepper to taste, then puree until smooth.

Cook the Carne Asada:

  1. Heat vegetable oil in a skillet over medium-high heat.
  2. Remove the steak from the marinade and cut it into strips.
  3. Cook the steak in the skillet, stirring constantly, until the meat is browned and cooked through, and most of the liquid has evaporated.

Assemble the Tacos:

  1. Warm the corn tortillas in a skillet or microwave until pliable.
  2. Place several tortillas on a plate, then layer with the cooked steak strips.
  3. Add onion relish and homemade salsa on top.
  4. Customize with additional toppings like Cotija cheese and a squeeze of lime, if desired.
